Let's Chat: go-to recipes


Today I'm linking up with Erika and Andrea for a fun topic: Let's talk recipes!

These are two recipes that have been on repeat lately. They are super easy and make a ton so I get leftovers for lunch!

1. Mom's breakfast casserole
6 eggs
16 oz. cottage cheese
12 oz. shredded cheese
small can green chilis
chopped sausage or bacon
Mix all these together in a bowl
Line your 13x9 pan with frozen tater tots or hash browns.
Cover the potatoes with your egg mix.
Bake 350* for 1 hour.
SUPER EASY!!!

2. Turkey taco soup: 
The original recipe calls it chili, but since I don't like beans or tomatoes, I've made it more like a stew/soup!
-1 pound of ground turkey, browned in pan with olive oil
-minced garlic
-chopped onion
-can green chiles
-chopped red pepper
-1 1/2 cups chicken broth
-14 oz. can tomato sauce
-2 tbsp apple cider vinegar
-paprika, chili powder, cayenne pepper, salt, pepper

Cook together for 45 minutes on low.
I ladel it over tortilla chips in a bowl. YUMMMMM!!!
